Buckwheat Banana Pancakes

These fluffy pancakes are the best way to start your morning! Don't have time to make pancakes? This recipe holds up well as a meal prep option. Just pop them in the toaster oven or microwave for a few minutes and enjoy.

Ingredients
  

  • non-stick spray
  • 3/4 cup buckwheat flour
  • 1/4 cup ground flax seeds
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 2 large eggs beaten
  • 1 cup soy milk unsweetened
  • 1 small banana sliced
  • 4 tsp pure maple syrup optional

Instructions
 

  • Heat a griddle or large skillet over medium heat until hot. Coat with a nonstick cooking spray.
  • In a medium bowl, combine buckwheat flour, flax seeds, baking powder, cinnamon, and allspice. Stir in eggs and soy milk until mixture is smooth and pourable.
  • For each pancake, use a 1/2 cup measure to scoop the batter onto the hot griddle. Add a few banana slices and cook for about 2 minutes or until the pancakes start to bubble.
  • Using a spatula, flip pancakes and cook for 1 - 2 minutes or until both sides are golden brown; transfer to a plate and serve.
  • Repeat with the remaining batter and banana slices, spraying the pan with cooking spray and adjusting the heat as needed between batches.
  • Divide pancakes between plates and drizzle each serving with 2 teaspoons of maple syrup.
