Buckwheat Banana Pancakes
These fluffy pancakes are the best way to start your morning! Don't have time to make pancakes? This recipe holds up well as a meal prep option. Just pop them in the toaster oven or microwave for a few minutes and enjoy.

- 3/4 cup buckwheat flour
- 1/4 cup ground flax seeds
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 2 large eggs beaten
- 1 cup soy milk unsweetened
- 1 small banana sliced
- 4 tsp pure maple syrup optional
Heat a griddle or large skillet over medium heat until hot. Coat with a nonstick cooking spray.
In a medium bowl, combine buckwheat flour, flax seeds, baking powder, cinnamon, and allspice. Stir in eggs and soy milk until mixture is smooth and pourable.
For each pancake, use a 1/2 cup measure to scoop the batter onto the hot griddle. Add a few banana slices and cook for about 2 minutes or until the pancakes start to bubble.
Using a spatula, flip pancakes and cook for 1 - 2 minutes or until both sides are golden brown; transfer to a plate and serve.
Repeat with the remaining batter and banana slices, spraying the pan with cooking spray and adjusting the heat as needed between batches.
Divide pancakes between plates and drizzle each serving with 2 teaspoons of maple syrup.
