The Easiest Pickled Red Onions

Whatever the reason, you're going to want to use this recipe for pickled red onions. Not only do pickled red onions add the perfect amount of acidity to any dish, they are easy to make. You only need 5 ingredients: apple cider vinegar, salt, sugar, red onions, and water.

- 1 16 oz Mason jar
- Mandolin optional
Ingredients
- 1 large onion sliced
- 3/4 cup apple cider vinegar
- 1/4 cup water
- pinch of salt
- 2 tbsp sugar
Instructions
- Slice the red onion in half through the root, then cut into thin slices, about 1/4" thick (you can use a mandolin for quick, uniform cuts). Add the slices to the Mason jar.
- In a saucepan, melt the apple cider vinegar, sugar, salt, and water over medium heat. Stir constantly until everything melts.
- Let the brine cool slightly, then pour over the red onions. Let the jars cool completely before covering them and putting them in the refrigerator. This can vary from 1-6 hours depending on the size of your jar.
- Cover the jar with the lid and keep refrigerated for up to 2 weeks.
