Asian-Style Salmon Burgers Recipe with Avocado Salsa and Roasted Broccoli

Ingredients
Roasted Broccoli:
- 1 lb broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
Burgers:
- 2, 5 ounce cans salmon, skinless and boneless
- 2 garlic cloves, chopped
- 1 teaspoon fresh ginger, chopped
- 1 teaspoon scallions, chopped
- 2 tablespoons low sodium soy sauce
- Hot sauce to taste
- 2 eggs
- ½ cup breadcrumbs
- 1 tablespoon olive oil
- 4 hamburger buns
Avocado Salsa:
- 1 ripe avocado, diced
- 4 cherry tomatoes, diced
- Juice of one lime
- 1 teaspoon low sodium soy sauce
- 1 teaspoon scallions, chopped
- ½ teaspoon fresh ginger, chopped
Directions
- Prep broccoli. Preheat oven to 400 degrees F. Lay broccoli florets on a sheet tray. Drizzle with olive oil, sprinkle with salt and pepper. Roast in oven for 20 minutes while you prep salmon burgers.
- In a medium bowl, combine all ingredients for the salmon burgers except for the olive oil and buns. Mash with fork until a thick and cohesive mixture forms. Form four patties.
- Heat large skillet over medium-high heat. Add olive oil and allow to heat. Add salmon burgers and cook for 3-4 minutes on each side. Finish the burgers in the oven until cooked through, about 10 minutes.
- While the burgers are finishing, prep the avocado salsa. In a small bowl, add avocado, tomatoes, lime, soy sauce, scallions, and ginger. Mix to combine.
- Serve burgers on a bun topped with avocado salsa and roasted broccoli on the side.
