Meet Shannon Herbert

PhD, RD, CDN

Dr. Shannon Herbert, PhD, RD, CDN is a registered dietitian and yoga instructor, specializing in women’s hormonal and endocrine health. She has extensive knowledge and experience treating clients with polycystic ovary syndrome (PCOS), endometriosis, and Hashimoto’s/hypothyroidism, as well as helping clients along their fertility, pre/post-natal, perimenopause, and menopause nutrition journeys. Shannon is incredibly passionate about empowering clients to reclaim their relationships with food and their bodies.

Shannon’s nutrition philosophy promotes a balanced relationship with food and comprehensive wellness. Shannon takes a holistic, well-rounded approach to health, incorporating principles of nutrition, movement, mindfulness, sleep hygiene, stress management and targeted supplementation, when appropriate, into her work with clients. While discussing weight is more than welcome, Shannon enjoys using other metrics to measure overall health, including monitoring lab values and the overall way one feels in their body. She has been a certified yoga instructor for a decade and has extensive experience teaching mindfulness and movement. She is also a certified Intuitive Eating counselor.

Shannon is compassionate, non-judgmental, and realistic. She practices from an all foods can fit approach, assisting clients in developing a neutral relationship with food and body. With a strong academic background and clinical expertise, Shannon is committed to empowering clients to manage their health through evidence-based nutrition strategies. Shannon is dedicated to staying at the forefront of nutritional science and continuously refining her practice to provide the highest standard of care for her clients.

Shannon received her Bachelor of Science degree in Global Public Health and Nutrition and Dietetics and her Master of Science degree in Clinical Nutrition at New York University. She completed her dietetic internship training at the James J. Peters Veterans Affairs Medical Center in Bronx, New York. Shannon earned her Doctorate of Philosophy in Clinical Nutrition from New York University, with a focus on polycystic ovary syndrome (PCOS), conducting groundbreaking research on lifestyle management of the condition. She brings a unique blend of academic rigor and practical insight to her work with clients, helping them achieve sustainable health improvements tailored to their specific needs.

As a thought leader in the field, Shannon is actively involved in research, publishing in peer-reviewed journals, and presenting at national conferences on PCOS and nutrition. Shannon has been the recipient of many awards and grants celebrating her work, including the American Society for Nutrition’s Emerging Leaders in Nutrition Science Abstract Recognition Award; two-time recipient of the New York University’s Academic Excellence Award; the Sports, Cardiovascular, and Wellness Nutrition Dietetic Practice Group Graduate Student Research Grant; and the Research Dietetic Practice Group Student Pilot Grant.

In addition to working with clients at Laura Cipullo Whole Nutrition Services + Yoga, Shannon is an Adjunct Professor in the Department of Nutrition and Food Studies at New York University Steinhardt School of Culture, Education, and Human Development. She is also an active member of the Academy of Nutrition and Dietetics. She currently serves as the Associate Editor for the quarterly journal of the Cardiovascular Health and Well-being Dietetic Practice Group of the Academy of Nutrition and Dietetics.

Shannon currently lives in Nyack, New York with her husband. Shannon sees clients in the NYC office on Wednesdays and is available for telehealth on other days.
