Quick Vegetarian Quesadillas
A delicious, quick, and easy recipe, perfect for anyone who is vegetarian or trying to eat more plant-based. Substitute the parmesan cheese for a vegan option for a dairy-free recipe. Even better, these quesadillas can be frozen and kept for later.

- 6 whole-wheat tortillas
- 1 cup shredded parmesan cheese
- 1 small white onion sliced thin
- 1 medium zucchini sliced thin
- 1 small red pepper chopped
- 1/2 cup frozen corn
- 2 tbsp fresh cilantro
- 2 cloves fresh garlic pressed
- cooking spray
Warm the oil spray in a large frying pan. Add the pressed garlic in the pan over medium heat.
Saute the onion for 3 minutes or until translucent. Add corn and allow it to cook for 2 minutes. Mix in the zucchini and pepper. Reduce heat to low.
Lightly coat a separate pan with cooking spray and set over low heat. Place one whole-wheat tortilla in the pan and cover the right half with the vegetable mixture.
Lightly sprinkle shredded cheese and cilantro over the vegetable mixture and then fold the left half of the tortilla over the right. Cook for 2 minutes on each side. Repeat until the vegetable mixture is used up.
