A Refreshing Summer Salad
Watermelon, cheese and arugula?? At first glance, these three ingredients seem so simple—almost too simple to make a delicious salad. But simple ingredients, and big flavors is what Mom Dishes It Out is all about. With this easy to follow recipe, you will come to associate watermelon not only at summer BBQ’s and picnics under the sun, but a common dish at the dinner table.
INGREDIENTS:
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
salt and white pepper, to taste
3 cups of packaged arugula
3 cups of watermelon, rind removed, seedless, cubed and chilled
4 oz feta cheese, crumbled
salt and white pepper, to taste
DIRECTIONS
- In a small bowl, whisk together balsamic vinegar and olive oil. Season with salt and pepper, to taste.
- In a large bowl, drizzle the dressing over the arugula, feta cheese, and chilled watermelon cubes. Toss gently and serve immediately.
