24 Jun Summer Cucumber Salad
INGREDIENTS
5 to 6 cucumbers, thinly sliced *You can keep the skin on for natural fiber
1 tbsp mustard, Dijon
½ cup tarragon vinegar
1 tbsp sugar
1 tsp salt
fresh dill
DIRECTIONS
In a large bowl, combine sliced cucumbers, mustard, vinegar, sugar and salt. Adjust seasonings if needed. Let set in refrigerator for 1+ hours to allow the flavors to blend. You can also prepare this in advance the night before for a quick and easy side salad. Sprinkle with dill before serving.
