Pumpkin Baked Oatmeal
Baked oatmeal is the best breakfast for busy mornings. It’s quick and easy to throw togetherand ready to be warmed up all week long. This one has a fall twist with pumpkin puree anddelicious topped with yogurt and cinnamon.
Ingredients
- 1 cup pumpkin puree
- 1 egg
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/2 tsp vanilla extract
- 2 cups old fashioned oats
- 2 scoops collagen peptide optional
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Instructions
- Preheat oven to 350 degrees F
- In a medium bowl, whisk pumpkin puree, egg, almond butter, maple syrup, and vanillaextract until smooth
- Fold in oats, collagen, cinnamon, and nutmeg, and any other mix-ins you would like toadd
- Pour into lightly greased 8x8 pan and bake for 30 minutes
- Cut into slices and serve warm topped with milk, yogurt, maple, syrup, or nut butter
