Pumpkin Baked Oatmeal

Baked oatmeal is the best breakfast for busy mornings. It’s quick and easy to throw together
and ready to be warmed up all week long. This one has a fall twist with pumpkin puree and
delicious topped with yogurt and cinnamon.

  • 1 cup pumpkin puree
  • 1 egg
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 2 cups old fashioned oats
  • 2 scoops collagen peptide optional
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg


  • Preheat oven to 350 degrees F
  • In a medium bowl, whisk pumpkin puree, egg, almond butter, maple syrup, and vanilla
    extract until smooth
  • Fold in oats, collagen, cinnamon, and nutmeg, and any other mix-ins you would like to
  • Pour into lightly greased 8x8 pan and bake for 30 minutes
  • Cut into slices and serve warm topped with milk, yogurt, maple, syrup, or nut butter
