15 Jul Nectarine Arugula Salad
INGREDIENTS (Makes 4 servings)
- 4 cups fresh arugula
- 2 nectarines, sliced (keep skin on for natural fiber)
- 1 tablespoon pine nuts, toasted
- 2 tablespoons crumbled blue cheese
- 1 tablespoon dried cranberries, minced
- 2 tablespoons raspberry vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons olive oil
- salt and pepper to taste
DIRECTIONS
In a large salad bowl, combine the arugula, sliced nectarines, pine nuts, and dried cranberries. In a small bowl, whisk together the raberry vinegar, dijon mustard, olive oil, and season with salt and pepper. Drizzle dressing over salad and gently toss. When ready to serve, sprinkle with crumbled blue cheese.
